✔️ Immediately after purchase, it is recommended to store truffles in an airtight container (a glass jar with a tight seal, for example). However, avoid plastic containers, as they can cause the truffles to deteriorate quickly.
✔️ It is also recommended to fill the container halfway with rice because the truffles will lose a bit of moisture every day. The rice will help maintain their humidity for a longer time, and, as a bonus, it will absorb the aroma of the truffles, which you can later use to prepare a fabulous truffle-infused risotto.
✔️ Similarly, you can store truffles in a container with eggs. Within just 2-3 days, the eggs will absorb the truffle fragrance through their shells, and you can use them to prepare omelettes or other dishes with a unique yet elegant and subtle aroma.
✔️ Another method is to wrap each truffle in paper (such as a napkin or paper towel), which will help delay dehydration and drying. You should change the paper daily since it will inevitably become slightly damp.
✔️ In all cases, truffles should be kept in the refrigerator. For longer preservation, they can also be stored in the freezer, individually wrapped in cling film or plastic wrap, and then grated directly over food without defrosting when needed (though I’ve never personally tried this method).
✔️ A simple and handy way to preserve truffles is to make homemade truffle products. With just one or two truffles, you can create several delicacies that can be kept for a long time. Truffle-infused oil, made with just a few truffle peels and slices, is one of the most common options and a real treat in the kitchen. Truffle butter is also very easy to make, and, when frozen, it can last quite a while (in the fridge, it will disappear quickly—I can assure you, in my case it lasted only two days!). Truffle-flavored salt requires almost no effort (just salt mixed with grated truffle), so there’s no reason not to try it, especially since it will smell so wonderful that you’ll find every excuse to sprinkle it over anything you cook. Truffle honey is another brilliant way to extend the pleasure of truffles, especially since honey, when stored in a sealed container, practically never expires. ✔️ Finally, another method I recently tried with my remaining truffles was preserving them whole in a jar of olive oil. I could have sliced them to make black truffle carpaccio, but I thought it was more fun to pack them in, whole and almost round, with their completely irregular shapes, into airtight jars.
