DEMEL, THE ROYAL CHOCOLATIER—A TASTE OF VIENNA'S SWEET TRADITION



If, like me, you don’t speak German but find yourself in Vienna, one of the first words you’ll learn—aside from Schnitzeland Strudel—will likely be Konditorei, a term used to describe pastry shops that serve ‘torte’ and other local delicacies. When it comes to Konditorei, Vienna excels, boasting an array of charming establishments that feel like stepping into a candy shop, no matter your age. The most famous, historic, and prestigious of them all is Demel, the official purveyor to the Royal Court.


Demel’s full name, K. u. K. Hofzuckerbäcker Ch. Demel’s Söhne, hints at its long and noble history. Founded in 1786, the shop’s true rise to prominence began in 1857 when the founder’s son, weary of business, sold it to one of his pastry apprentices, Christof Demel. Christof is the man who would transform Demel into a renowned brand, recognized and celebrated at the highest levels—earning the coveted title of Royal Court Supplier. It was Christof Demel himself who delivered chocolates and candied violets to Princess Sisi at the Hofburg Palace.


Today, Demel has become one of Vienna’s most popular tourist attractions, rivaling the Hofburg Palace itself, where Herr Demel once delivered his sweets. With its impressive decor that reflects the brand’s deep-rooted tradition and history, Demel offers a wide array of delicacies including artisanal chocolates, cakes, marmalades, nougats, and even more substantial meals from a carefully curated menu. The classic black-and-white uniforms worn by the courteous staff add to the authentic Viennese experience.


For those with a passion for the culinary arts, Demel offers another delightful surprise: the kitchen, where all these sweet and savory wonders are prepared, isn’t hidden away. Instead, it’s fully visible through transparent glass walls, allowing curious visitors to watch as cakes are intricately decorated and edible masterpieces are crafted right before their eyes.
